Trying out a new recipe this week! Using Vachon 'Ah Caramel' cakes as the base, I'm making a whipped cream cheese (thinned with whipping cream and vanilla) mousse to put on top and then covering in fruit...
Then I have to find taste testers who aren't gluten sensitive...

After over 15 years of catering service, it is with frustration and regret that I will be unable to continue offering catering services in the immediate future. My family has grown considerably since I began and recent events have rendered my ability to prepare and serve food to the general public impossible. Due to Covid19 restrictions/guidelines as well as a very active full time job, that is more stable and financially rewarding, I am putting my remaining time into concentrating on my current path. Thank you to all my former clients for over 15 years of memories and awesome creative experiences! I hope that someday, when the world returns to 'normal' and I have a little more time available, I can return to serving more than just friends and family. Chef Jeff :)

I want to do a promotion for Christmas. What is the BEST idea? Last year I did a cheesecake sale from the week before Halloween until the first week of December and fudge was 2 for 1 until New Year's. This year I want to do something equally delicious but with a higher interest. Since I only advertise through word of mouth and here on Facebook, my audience is limited only by the number of people that see this post :) Ideas anyone?

Special Seasoning

1/2 cup Garlic Powder
1/2 cup Dried Oregano or Basil
1-2 Tablespoons Chili Powder
1/2 Teaspoon Dry Mustard
1 Teaspoon Finely Ground Pink Salt
1/4 Teaspoon Fine Ground Black or White Pepper

For Heat : add 1/4 cup crushed chilies
For Sweet : add 1/4 cup pureed golden raisins
For Savory : add 1/4 cup dried lemon, lime or orange peel (use zester on grater)

This is just MY favorite blend to use with most recipes I experiment with. Most recipes use 1 tablespoon of the mixture, up to a maximum of a half cup for a full recipe :) Enjoy!!

Gluten Free & Dairy Free Zucchini Rings

1 Medium Sized Zucchini (approx 2 lbs)
2 Cups Rice Flour
1/4 Cup Special Seasoning*
1/2 Cup Earth Balance Dairy Free Butter
3 Eggs, separated
1/4 Cup Olive Oil for frying (or deep fryer)

1. Remove skin from zucchini and cut into 1/4" thick slices. Remove seeds and set aside. Should look like flat donuts.
2. Mix Rice flour and seasoning in shallow dish.
3. Melt Earth Balance Butter. Place butter, egg YOLKS and seeds into a blender. Puree until liquid texture.
4. Whip or whisk egg WHITES until soft peaks form. Fold into butter mixture.
5. Dip rings into butter, then seasoned flour. Place on parchment covered cookie sheet. Can be layered between multiple layers of parchment.
6. Place in freezer for 30-45 minutes to set coating. Remove from freezer and repeat step 5.
7. Prepare Olive Oil or Deep Fryer. If using oil, you want it to start bubbling softly (medium high heat) if using deep fryer, use french fry setting.
8. Place 5-8 rings in oil and fry to golden brown, turn over only once if possible to limit batter falling off. Serve with favorite salad dressing or dipping sauce!

Great as a snack or side dish!
