Gluten Free & Dairy Free Zucchini Rings
1 Medium Sized Zucchini (approx 2 lbs)
2 Cups Rice Flour
1/4 Cup Special Seasoning*
1/2 Cup Earth Balance Dairy Free Butter
3 Eggs, separated
1/4 Cup Olive Oil for frying (or deep fryer)
1. Remove skin from zucchini and cut into 1/4" thick slices. Remove seeds and set aside. Should look like flat donuts.
2. Mix Rice flour and seasoning in shallow dish.
3. Melt Earth Balance Butter. Place butter, egg YOLKS and seeds into a blender. Puree until liquid texture.
4. Whip or whisk egg WHITES until soft peaks form. Fold into butter mixture.
5. Dip rings into butter, then seasoned flour. Place on parchment covered cookie sheet. Can be layered between multiple layers of parchment.
6. Place in freezer for 30-45 minutes to set coating. Remove from freezer and repeat step 5.
7. Prepare Olive Oil or Deep Fryer. If using oil, you want it to start bubbling softly (medium high heat) if using deep fryer, use french fry setting.
8. Place 5-8 rings in oil and fry to golden brown, turn over only once if possible to limit batter falling off. Serve with favorite salad dressing or dipping sauce!
Great as a snack or side dish!
