PHỞ TÁI LĂN HÀ NỘI is more than just a bowl of PHỞ.

The most important part is the broth.
Traditional Hanoi PHỞ broth is slowly simmered with beef bones for many hours to create a clean, natural sweetness. Cinnamon, star anise, black cardamom, and other spices are added with care. Every ingredient must be in balance. The spices should support the broth, never overpower it.
The broth should be clear, light, and full of natural flavor—never too salty, never too strong, and never overloaded with spices.

No seasoning can replace time, patience, and experience. If the broth is not true to the traditional taste of old Hanoi, it simply is not authentic Hanoi PHỞ.
The PHỞ noodles are just as important.
They should be medium in width, not too thick and not too thin. They must be cooked until perfectly soft while still keeping their natural texture—never mushy and never tough.
Finally come the white onion, green onion, and cilantro.
These simple ingredients complete the bowl, adding freshness and bringing out the full aroma of the broth without taking away from its natural taste.
In the traditional Hanoi way, PHỞ is enjoyed just as it is.
No bean sprouts.
No hoisin sauce.
No basil.
If you like, simply add a little chili sauce, garlic vinegar, or a squeeze of fresh lime. These are meant to bring out the flavor of the broth, not cover it.
