My beautiful daughter is 5 today!!! She is all about unicorns, sparkles and rainbows. We don’t need a lot of cake this time, but I needed some height to make the unicorn so I cut the cake in half and stacked those all together, giving me the perfect height. I like how that turned out and still made the cake look really nice.

You know what I love about Halloween? It’s my sister in law’s birthday! While she never gets a fancy cake from me, I still get to play around again. This cake had to be assembled in a matter of minutes for lack of more time, but still was fun.
It was a gluten free lemon cake. A very filling cake with the almond flour in it.

Some of my cake decorator friends have been raving about this velvet top icing, so I decided to give it a try. I am in LOVE with it! It handles so well and tastes so good! Not as sugar sweet as buttercream is either.

It’s my oldest’ birthday today. He turns 12 this 12’th day of the 12’th month! How cool is that!?
We have had so much cake around our house lately, that I let all the boys at his party have as big a piece as they wanted to not have as many left overs later. Lol.
