When my friend Claire told me she had duck eggs, there was nothing left to do but buy some and make a quiche for brunch!!!

This is my version of an everyday quiche with a parmesan crust, versatile for breakfast, lunch or even supper when you’re feeling lazy. Comes together in about 15 min

I will be sharing the recipe for free on my substack later on today. If you’re interested in trying duck eggs I recommend asking Claire Strougler if she has any on facebook!!!

I have been a little quiet lately, I am still as passionate about food and local agriculture as I was, but until the end of winter I will be taking a break from cooking. We will be back as rodeo season starts again to keep our favourite athletes fed on the road. I am also excited to share some recipes with you guys on my substack (link will be in the bio) as soon as february starts.

What I’ve been doing lately is creating some tallow products, I am so excited to announce that I finally perfected my tallow lotion, 3 very high quality ingredients for sensitive skins ; beef tallow, castor oil and lavender oil. Rendered and filtered twice and precisely whipped to give it its creamy texture when applying.

My family and I have been personally using this lotion for months now, from my acne prone skin to my baby’s eczema, it has worked wonders. So I am now ready to offer it to you.

Those retail for 35$ a jar. I am not yet able to ship, but keep an eye out for the announcement of our website. Pick up in Stettler.

Try to always keep the jar closed in a darker space, product might melt a bit if exposed to heat, if exposed to cold temperatures it will harden. If your tallow has harden it is still usable and will melt on your skin the same! Shelf life is a year.

CHOCOLATE TRUFFLES RECIPE

Ingredients:
- 800g of quality chocolate (milk or dark)
- 400g of 35% cream

Directions:
- in a pot slowly heat your cream over medium low heat
- chop all your chocolate in fine pieces
- when the cream is hot but not boiling add your chocolate gradually while stirring until everything is combined
- transfer the chocolate mixture in a bowl and put in the fridge for 4h
- when it is set use your hands to roll balls the size of a loonie and then roll the truffles into whatever you would like (i like candy cane, cacao powder, sprinkle, mini marshmallow, ritz crackers, the choice is yours!)

This recipe should produce about 4 dozens, cut in half if you would like less. Keep in the fridge or freezer and enjoy!!!

Words have been getting around about our delicious chocolate truffle and I thought as a little thank you I would share the recipe this weekend.
