We always strive to serve
the best ingredients with as little handling as possible,
so the natural flavor can speak for itself.

But even that standard
exists only within what nature allows.

Today, we were not able to secure enough of the back-cut portion of the Spanish tuna we received.

Because of this, Tuna à la carte will not be available today.

You may also notice that
tuna appears less frequently than usual in some dishes today.

We know many of our guests love tuna,
so we wanted to share this in advance.

As always,
we will prepare each plate honestly with the best fish available that day.

It’s the Eglinton Crosstown LRT.

Some neighbors may have waited 15 years for this.
We personally waited 7.

That manga showed me.

I wasn’t good at cooking.

I never dreamed of becoming a chef.

But I couldn’t stop reading ‘Shota no Sushi’.

The stories were dramatic—
one piece of sushi, changing everything.
Looking back, I know life isn’t like that.

But back then, I didn’t know.
And maybe that’s why I believed it so deeply.

If you put your heart into something,
it will reach someone.

That’s what I wanted to do.
Not to be the best chef—
but to make something that meant something.

That was the beginning. 🥢
