My grandfather had a habit. He’d look around a full room, find whoever had gone quiet, and say… “You’re too quiet. What do you think?”

I think of him every time I look at an empty chair in the bar. Someone will sit there today. Ten minutes, maybe. Or long enough that we learn their name.

The chair matters… and sure so does somebody noticing who sits in it.

When I came to Toronto, I could go a week without anyone looking me in the eye. Back home I’d had my local: the back room, the jukebox, the pool table, regulars with nicknames they never asked for. Ye walked in and someone noticed.

I didn’t know how much that mattered until it was gone.
So… I opened a wee coffee bar in East York and tried to build that room again.

Then I wrote a book about why rooms like it matter.
The Quiet Rebellion. Out now.

sunday light on Fulton. A cap, a cup, a dahlia in cut glass, and nowhere he needs to be.

That’s the whole idea of this place. No time limits. No hurry. Just a table by the window, and a room that knows your name if you want it to.

The sign faces out. The welcome faces in.

stay for the craic.

The coffee’s lovely, but it’s really just the excuse. What we’re after is the bit that comes after: the second cup you didn’t plan on, the chat with whoever’s at the next table, the afternoon that drifts a little longer than it should.

No time limits. No rush. Wifi’s on, the outlets are uncovered, and there’s always a seat with your name on it, even if we haven’t learned it yet.

Pull up a wee chair. We’ll put the kettle on (well, the espresso machine).

Papote is back!

We’re so excited to welcome our friends from Papote back to the bar for another pop-up. They bake small-batch French pastries right here in the city: buttery madeleines, Kouign-amann, and many more , all made with real care.

Last time they sold out fast, so come early.

📅 Saturday, October 17
⏰ 9AM until sold out
📍 852 Pape Avenue, East York

Grab a coffee, pick out something from the pastry table, and stay a while. Every pastry you buy supports a local small business, and we can’t think of a better way to spend a Saturday morning.

Come on over.

Twenty-five years in coffee, and the counter is still teaching me. Some of these took me a long time to learn, and one I’m still working on.

Which one rings true for you? Tell me, then stay a little longer next time.

The light comes in low this time of year. It finds the flowers first, then the cup, then whoever’s lucky enough to be sitting there.

Take a wee seat by the window and stay a little longer.

No rush and no laptop required. Just a good coffee and a quiet corner of Pape.

a slow morning espresso… for anyone who’d like to take their time.

there’s a moment, just after the first shot runs, when the bar goes quiet. the grinder rests and the steam settles… then someone by the window turns a page.

this one’s an espresso romano: a bright slice of lemon under dark, slow espresso. it’s an old habit, a wee ritual, and a good reason to stand still for a minute before the day starts asking things of you.

sure come on in & sit down. nobody’s rushing you here.

People sometimes ask why I opened a coffee bar, and the honest answer has very little to do with coffee.

My grandfather could spot whoever’d gone quiet in a room and turn to them: “You’re too quiet… what do you think?” Then he’d wait for the answer.

My mother’s whole philosophy fit in one line: the foundation of hospitality is to be hospitable. No script, no grand gesture… just an open door.

My sister made sure the room was ready before the first person ever arrived.

I spent 25 years learning coffee behind other people’s counters. What I actually learned was theirs: how a room, run right, can turn a stranger into part of your life.

oliver is what happens when you try to build that for people who weren’t lucky enough to be born into it.

Thankful to be a CSB100 Storyteller Award Nominee. ☕️🍀
