West Kootenays… step aside from the soup spoons for just a second. 👀🔥

We’ve had our heads down in the test kitchen getting everything dialed in for our big return to Nelson!

If you’ve ever walked the lunchtime street markets of Saigon, you know this aroma from three blocks away: flame-caramelized grilled pork patties (Nem Nướng) and traditional rice-paper spring rolls fried to an explosive crunch (Chả Giò).

Every single component in this bowl is designed for maximum flavor contrast:

+ Hand-rolled crispy rice-paper spring rolls (shatteringly crisp crust with seasoned pork and mushroom filling)

+ Flame-seared artisan pork patties seasoned with garlic and cracked black pepper

+ Chilled rice vermicelli on a bed of fresh mint, aromatic Thai basil, crisp julienned cucumbers, and bean sprouts

+ A generous crown of golden crispy fried shallots (hành phi)

+ 100% Peanut-Free & Scallion-Oil Free!

We ran a private tasting panel with our long-time supporters and the verdict was unanimous: it’s making its official debut at our next pop-up! (Pre-order available >>> senorigin.ca)

📍 Where: Nelson District Rod & Gun Club (801 Railway St, Nelson, BC)

📅 When: Saturday, November 7, 2026

⏰ Hours: Lunch (11 AM – 3 PM) | Dinner (4 PM – 7 PM)

What does it take to bring authentic Vietnamese food to the West Kootenays? Sometimes, it takes a very full cargo van and two long days in Vancouver!

Last week, our SEN Origin team headed to Vancouver on a special grocery trip. We left home before 5 a.m. on Thursday and didn't get back until 10 p.m. on Friday.

Almost eight hours of driving to get there, a full day of shopping, a few hours of sleep, and another morning spent sourcing ingredients before packing the van to the brim!

It was a lot of work, but we had an important reason for making the trip.

We wanted to connect with suppliers who could provide us with authentic Vietnamese ingredients that are difficult to find locally here in the West Kootenays. We brought back supplies for our phở and ingredients for a new dish we're developing: Bún Chả Giò Nem Nướng — Vietnamese vermicelli with spring rolls and grilled pork sausage.

For us, adding something new to the menu isn't just about offering more choices. We want to find the right ingredients, keep learning, and serve food that reflects the Vietnamese flavours and traditions we care about.

During our visit, we also stopped by several Vietnamese restaurants to observe how they prepare their food, choose ingredients, and serve their customers. We came away with new ideas and a clearer understanding of the standards we want to maintain at SEN Origin.

And this trip brought another exciting change: we're happy to welcome a new member to our team! She brings restaurant cooking experience from the West Kootenay area and knowledge of Vietnamese cuisine. We're excited to have her join us as we continue working toward bringing SEN Origin to more communities.

Running a small food business involves so much more than what you see at a pop-up. There's planning, sourcing, learning, loading, unloading, and plenty of hard work that happens long before the first bowl reaches your table.

Sometimes, bringing the taste of home to a small community means driving hundreds of kilometres. For us, it's part of building something we're proud of — one ingredient, one dish, and one pop-up at a time.

We're still growing and learning, and we're excited about what's ahead. Thank you for welcoming SEN Origin into your community and supporting our little family business. Every visit, recommendation, and shared bowl helps us keep moving forward. ❤️

🌸 The moments between the bowls

One of the most beautiful things about this SEN Origin journey is realizing that the connection doesn't always happen through the food.

A couple who has been coming to our pop-ups again and again surprised us by leaving these beautiful flowers at our order counter. None of us expected it. Our whole team was surprised and felt so loved. ❤️

It made us think about how a customer can become a returning customer, then a familiar face, and eventually someone who feels like part of the SEN Origin community.

We’re seeing more and more families and friends coming together. They finish their bowls, but the bowls are empty and nobody seems ready to leave.

They stay to talk, laugh, take photos, play games, and sometimes even run into friends they didn't expect to see.

Our team has become part of those moments too — chatting with customers, recognizing familiar faces, sharing laughs and getting to know the people behind the bowls.

Maybe that's one of the most special things SEN Origin has given us.

The phở brings people to the table. The connection makes them stay.

Thank you for every visit, every conversation, every smile, and every little gesture that reminds our small family team that we're building something together.

You may not realize it, but those little moments mean so much to us.

And we're so grateful you're part of the SEN Origin story. 🍜❤️

Once, someone made Pho for a sick little boy because they wanted him to eat.

Today, that little boy makes Pho for other people. ❤️
Not long ago, while I was working at KBRH, a patient asked me a question I didn't expect:
"Are you the guy who makes Pho?"... "When is your next Pho event?"...

I smiled. I was surprised—and honestly, a little proud. But something about that moment took me back to when I was about 10 years old. I was in the hospital with dengue fever for about a week. I didn't want to eat anything. My tongue felt bitter, and even looking at a plate of rice made me imagine how hard it would be to swallow.

My parents were worried. They tried the food they normally cooked for me, but I couldn't eat. Then my dad brought me a bowl of sliced beef Pho. I didn't want it at first either. But my mom encouraged me to try. I couldn't finish the bowl. But I finally ate something.

And I remember feeling better—not magically cured, of course. I was still taking the medicine my doctor prescribed. But having something warm and easy to eat made me feel like some of that heaviness was finally lifting.

Years later, when I studied Food Technology, I began to understand Pho differently.

I realized that what looks like a simple bowl can actually bring together carbohydrates for energy, protein from beef, vegetables and herbs, and a warm broth that makes the meal easier to eat when your appetite isn't there.

That's when I started seeing Pho as more than just a Vietnamese dish. It's a balanced meal. It's comfort. And sometimes, it's simply something you can manage to eat when you don't feel like eating anything at all.

And now, years later, I find myself working in a hospital while making Pho for my own community.

Sometimes I think about that little boy in the hospital. His parents were just trying to find something he could eat. They didn't know that many years later, their son would study Food Technology, work in a hospital, and start making the same food for other people.

Maybe that's why Pho has always felt like more than food to me. Sometimes food isn't just food. Sometimes it's the thing someone makes for you when they love you and want you to feel better.

And maybe that's one reason SEN Origin exists today.
To share a bowl of Pho that carries not only the taste of where I came from...

but a little bit of the love that brought me here.
