We honestly weren’t sure how fresh-milled challah would be received.

After all, many people have never heard of challah, let alone tasted it.

That’s why we’ve been offering samples whenever we bring it to market.

One of our favourite parts of market day has been watching people’s eyes light up after that first bite. Every market we’ve brought challah to so far has ended with just one loaf remaining.

So what makes it so special?

It starts with freshly milled flour. We mill our own hard red wheat and spelt just before baking, preserving the full flavour of the grain in a way commercial flour simply can’t. Combined with local unpasteurized honey, it creates a loaf that’s soft, rich in flavour and surprisingly delicious all on its own.

It’s also perfect for pulling apart and sharing around the table with family and friends. And if there happens to be any left the next morning, it makes absolutely incredible French toast.

We’ll have fresh challah at the Trenton Station Fresh & Local Market this Sunday from 11:00–2:00.

We’re heading to a new market tomorrow! 💙

But first, you can find us TODAY at the Pictou Farmers’ Market from 4–7 PM!

Then tomorrow, we’re excited to be joining the Fairview Farmers’ Market for the first time, and bringing our fresh-milled baking to Halifax!

We’ll have a selection of our breads, rolls, scones and sweet treats, all made with whole grains that we mill fresh ourselves before baking. If you’ve been curious about fresh-milled baking, come by and see us and try some yummy samples!

Before I bought my grain mill, one of my biggest concerns was whether I would actually like the taste of fresh-milled bread.

I assumed it would taste like the whole wheat bread I was used to buying at the grocery store and I had never really enjoyed that flavour.

But I invested in a grain mill anyway.

Why?

Because the more I learned about flour and how our modern food system had changed something as basic as bread, the more I wanted to do things differently.

I learned about the difference between using the whole grain and refined flour, where parts of the grain are removed during processing. I started paying attention to what was in many commercially produced breads and learning more about how grain is grown, processed and turned into the flour sitting on a grocery-store shelf.

And I became convinced that I wanted to go back to something much simpler:

Whole grains. Milled fresh. Baked into bread.

So I bought the mill, even though I still wasn’t sure I would actually enjoy the flavour.

And then I tasted it.

I couldn’t believe how delicious it was.

Freshly milled whole grains tasted nothing like the whole wheat bread I had expected. The flavour was rich, fresh and incredibly delicious and I began discovering that different grains each bring something unique of their own.

What started as a decision I made because I wanted something more wholesome became something I genuinely loved for the flavour, too.

I didn’t have to choose between bread I felt good about eating and bread I actually wanted to eat.

And that is a huge part of why I do what I do now.

The bins in this photo are some of the whole grains we keep here at Honey Blue. We mill our flour fresh and use whole grains to make baked goods that aren’t just about what goes into them, they’re also meant to be genuinely delicious.

If your idea of whole grain bread is the whole wheat bread you’ve had from the grocery store, I understand.

That’s exactly what I thought, too.

But fresh-milled bread completely changed my mind.

If you’ve been wanting to try our fresh-milled bread, you can order ahead for pickup at the Pictou Farmers’ Market this Wednesday.

Our sandwich bread is made with 100% whole grains that we mill fresh ourselves—and it’s soft, delicious, and made for everyday sandwiches and toast. Whole grain bread doesn’t have to be dense, dry, or crumbly.

Preordering means you can choose exactly what you want and have it waiting for you at the market.

Today is an exciting day at Honey Blue—our new commercial spiral mixer has arrived! This is a big investment in our bakery and another step toward making the best fresh-milled bread possible.

To put it to work, I’ll be baking a fresh batch of bread today, so I’m opening up special pickup today only!
