The best kitchens never stop learning.

Five Sails team traded aprons for boots and spent the day at Richmond GAIA Farm with Farmer Noah, learning about the care, patience, and stewardship behind every harvest.

There were plenty of questions, plenty of laughter, and even more appreciation for the people growing the ingredients that shape our menus.

Chef Alex Kim and the GAIA Farm team exchanged ideas, but we left with something even more valuable, a deeper understanding of British Columbia’s seasons, its terroir, and the responsibility we share in supporting local agriculture.

The journey through The Altitude: BC Spring starts with an invitation into the Five Sails kitchen, where guests are welcomed with a canapé that sets the tone for the evening.

Inspired by British Columbia’s spring harvest and Chef Alex Kim’s philosophy of using every part of the ingredient with intention, Fraser Valley chicken liver is transformed into a silky pâté, paired with local strawberries in every expression; compote, purée, pickled green strawberries, crisp strawberry leaf tempura, and fresh lemon balm.

A small bite that speaks to seasonality, craftsmanship, and the stories behind every ingredient before the journey unfolds in the dining room.

As part of the Visa Infinite Dining Series, Five Sails Culinary Director Chef Alex Kim joined Chef Chanthy Yen and the team at Touk for an exclusive evening where Cambodian flavours met the Pacific Northwest through a thoughtfully curated multi-course menu.

A celebration of culture, seasonality, and the conversations that happen through food, bringing together two distinct culinary perspectives for one unforgettable experience.

For Chef Alex Kim, cooking over charcoal has always meant more than flavour.

It brings him back to summers spent with his grandparents in Korea, where meals cooked over live fire became some of his earliest memories of food.

Today, that same approach shapes the Fraser Valley free-run Loong Kong chicken in The Altitude: BC Spring. Gently charcoal grilled to bring depth, warmth, and character to the ingredient, while letting its natural flavour remain at the centre of the plate.

There’s something grounding about seeing the work behind an ingredient you thought you already knew. The early mornings, the cold water, the patience, the care, and the deep respect for the ocean that guides every catch.

Living on the West Coast, we’re incredibly lucky to work with fresh catch from British Columbia’s waters, shaped by seasonality, terroir, and the people who understand the rhythm of the coast better than anyone else. Sustainability isn’t just part of the conversation; it’s part of the responsibility.

Thank you to Kyle, Boone, and Max for welcoming us onto the boat and sharing why sustainable fishing matters so deeply.

Spot prawn season is one of the moments we wait for all year.

At Five Sails, Chef Alex Kim’s new seasonal features celebrate the sweetness and delicacy of BC spot prawns through a menu shaped by precision, restraint, and the flavours of the coast.

From spot prawn crudo with yuzu kosho vinaigrette to a deeply layered lobster bisque and grilled spot prawns finished with beurre blanc, fermented chilli, and caviar, each course is designed to let the ingredient speak for itself.

Wildflowers is the final course of The Altitude: BC Spring, spruce tip semifreddo and meringue inspired by BC’s alpine landscape. Light, floral, and subtly citrusy, it’s a dessert that doesn’t try too hard, but stays with you long after the last bite.

A tasting menu that takes you on a journey through British Columbia.

Our new menu, The Altitude: BC Spring, begins at the Pacific coastline and slowly moves inland, from cold ocean waters and spring vegetables to the deeper, more rugged flavours of BC’s mountains.

Inspired by a recent trip through Peru, where Chef Alex Kim saw how dramatically ingredients and cooking change with elevation, this menu brings that same idea home. Each course follows a different part of British Columbia: the coast, the valleys, the interior, and finally the alpine.  

You’ll begin with Pacific oyster, seaweed, shrimp, and albacore tuna. From there, the menu moves into Fraser Valley chicken, spring lamb, braised beef cheeks, and finishes with wild berries, spruce tip, and wildflowers, a reflection of spring across the province.  

This is British Columbia, course by course.
