A little story behind one of our diners’ favourite dishes, from our very own Chef Cherry. ❤️
“Every time I make our crab spring rolls, it brings me back home to Hải Phòng, the coastal city where I grew up.
Back home, we call this dish “Nem Cua Bể,” our traditional Hải Phòng crab spring rolls. The filling is classic to where I’m from — pork, shrimp, crab, shiitake mushrooms, wood ear mushrooms, glass noodles, egg, and bean sprouts. In Hải Phòng, we keep the filling focused on the seafood and texture rather than adding lots of vegetables. Simple ingredients, carefully balanced.
When I moved to Vancouver, I never expected to find seafood that reminded me so much of home. Then I discovered fresh BC crab. The sweetness, firmness, and freshness immediately connected me back to the flavours I grew up with beside the ocean.
Over time, these spring rolls became a reflection of both places that shaped me, Hải Phòng and BC. I still import the traditional rice paper wrapper from Vietnam because it fries lighter and crispier the way we do it back home, but the crab itself here is truly incredible.
One of the best compliments I receive is hearing visitors from Hải Phòng tell me these rolls remind them of home… and sometimes even say they love the crab here more.
Every crab spring roll we serve carries a little piece of my story with it.”
