Chef’s feature this weekend: house-made empanadas, crisp on the outside, soft and fluffy in the centre, stuffed with cheese and built to disappear fast.

This month’s is the beautifully wild La Venenosa Tabernas III — Los Hermanos. Rustic in all the right ways, with earthy agave, soft smoke, savoury minerality, and a finish that just keeps evolving in the glass.

Raicilla remains one of Mexico’s best-kept secrets, a regional agave spirit from Jalisco that still feels deeply connected to tradition and place. Untamed, complex, and endlessly interesting.

If you’ve never explored raicilla before, this is the bottle to start with.
