The Flag was first designed in 1821 after winning the Independence War, consisting in a rectangle divided in three equal vertical bands colors green, white and red, with the Coat of Arms at the center. Since then, the Coat of Arms and the meaning of the colors have changed, the last modification being in 1968.
Every year, on February 24, Mexico celebrates “Flag Day”, a national holiday dedicated to the flag as a symbol of national pride, freedom and justice that unites all Mexicans. The Flag is protected by law, cannot be modified or altered and always needs to be handled with care and due respect.

🌮 TACOS DE BIRRIA 🌮

Birria originated in 16th-century Jalisco, Mexico, as a slow-cooked, spicy stew created by indigenous people using goat meat introduced by Spanish conquistadors. Originally a way to make tough, gamey meat palatable with spices and chilies, it became a beloved, traditionally celebratory, and savory dish. It has since evolved from a traditional goat stew into a popular, globalized beef taco trend. Served in a crispy, consommé-dipped tortilla, with melted cheese. Accompanied with a side of the cooking broth (consommé) for dipping and sipping.
