Bollito Misto Piemontese: a history of ancient flavors
It is easy to say Bollito (or mixed boiled meats …which to me doesn’t sound very appetizing neither); but in Piedmont this dish, born as a poor dish and then became a rich dish and still much sought after by Italian traditions connoisseurs , is a real – ancient – institution, in fact it is called Gran Bollito Misto Piemontese.
The secret ingredients to prepare the piedmontese mixed boiled meat are patience and time, Bollito is a real "slow" dish, in fact it takes the right cooking time that must be slow and gentle in order to obtain the perfect meats, of different textures, some tender others more "crunchy" but absolutely tasty.
The "rule of seven."
The original recipe consists of 7 cuts of veal as well as 7 other tasty cuts that give this dish its typical and unmistakable flavor. Accompanying 7 sauces that complete this dish worthy of a royal court.
IT IS NOT a real Gran Bollito if it does not contain seven precise cuts that, as per tradition, must boil together and in precise passages and that constitute "La Polpa"
In addition to the meat cuts IT IS NOT a Gran Bollito without seven other fundamental cuts called "ammennicoli", particularly tasty, fat and rich pieces that give the Bollito its characteristic scent and flavor
Once the Bollito is ready each diner receives the 14 cuts accompanied by boiled potatoes and carrots, onion salad and buttered cabbage
Of course the boiled is never served alone, but always together with the sauces , seven aswell as per tradition.

准备Bollito的秘诀是耐心和时间,这是一道真正意义上的“慢”菜,实际上,它需要非常精确的烹饪时间,并且必须缓慢而温和的烹煮,才能获得具有不同口感的完美肉质, 有些嫩滑,有些“松脆”,但毋庸置疑的是:绝对好吃。
著名的“七法则”。
这道菜的原始配方包括7个不同部位的小牛肉,以及7种其他美味的肉类,使得这道菜具有经典而独特的风味。 伴随着7种酱汁,这道菜成为了皇家宫廷必备菜肴。
如果它不能按照传统混合烹煮7种精确的肉类切块,那就不能被称作真正的Gran Bollito。
除了7种特定的肉块之外,如果缺少其他7种被称为“ ammennicoli”的基本肉块,同样也不能称为Gran Bollito,因为这些基本肉块肥美和丰富的口感,赋予了Bollito其独特的香气和风味
当然,这些食物绝不会单独食用,而是与调味料搭配食用,按照传统做法,酱汁也要7种。
当Bollito准备就绪,每位用餐者都将获得14份肉块,佐以煮土豆和胡萝卜,洋葱沙拉和黄油卷心菜。
地道和传统的晚餐,除了精美的食物,优质的葡萄酒也不可或缺。
