The Dough is made with a slow spinning fork mixer, which is ideal for Neapolitan dough due to the gentle movement which doesn’t stress the gluten, using for it only italian flours, blended together to give an unique touch to the original Neapolitan Recipe; the recipe wants a dough to be baked only after it had a minimum amount of hours of fermentation, that allows the gluten to breakdown, and give the pizza a very light and soft feeling. this means, never less than 20 hours of rising and fermentation.
