Willkommen in Kanaan, eine israelisch-palästinensischen Zusammenarbeit, die 2015 von Oz Ben David (Israel) und Jalil Dabit (Palästina) gegründet wurde. Wir kommen beide aus Familien mit einer reichen kulinarischen Tradition und haben uns entschlos- sen, gemeinsam die Aromen, Gewürze und Kochmethoden, die wir von unseren Müttern, Vätern und Großeltern gelernt haben, nach Berlin zu br
ingen. Zuhause nennen wir es "einen Tisch zu öffnen": der Tisch ist mit frischen Salaten, Dips, Soßen, Hummus, gegrilltem Fleisch und handgemachtem Pitabrot bedeckt. In unseren Restaurants kreieren wir dieses festliches Geschmackserlebnis und bringen es von der Levante ins Herz Berlins - in einer vegan-vegetarischen Version. Wir nannten unser Projekt "Kanaan", der biblische Name der Region, die heute als Israel und Palästi- na bekannt ist, und als Erinnerung an den Geburtsort unseres Vaters Abraham und an die Tage, in denen wir alle als Brüder lebten, unter einem Gott, in einem Zelt. Wir wollten der Welt beweisen, dass ein Jude und ein Palästinenser friedlich zusammenarbeiten können und damit hoffentlich andere inspirieren. Die Idee der Zusammenarbeit, des Zusammenlebens und des Pluralismus ist bis heute unser Leitbild. Unsere Mitarbeiter geben das schönste Beispiel für unsere Ideale: Männer, Frauen, LGBTQ-Menschen aus Israel, Palästina und den ganzen Nahen Osten, Asien und Afrika, die alle unter einem Dach in Har- monie mit Frieden und gegenseitigem Respekt zusammenarbeiten. Welcome to Kanaan, an Israeli-Palestinian collaboration founded by Oz Ben David (Israel) and Jalil Dabit (Palestine) in 2015. We both come from families with a rich culinary tradition and decided to join forces and bring the �lavours, spices and cooking methods we learned from our mothers, fathers and grandparent to Berlin. Back home we call it ‘to open a table’ and it’s the tradition in all middle eastern restaurants: the table is covered with fresh salads, dips, sauces, hummus, grilled meats and hand made handmade pita bread. In our restaurants, we recreate this lush, festive dining experience and bring it from the Levant to the heart of Berlin - in a vegan-vegetarian version. We named our project ‘Kanaan’, the biblical name of the region known today as Israel and Palestine, and as a reminder of the birthplace of Abraham, our father, and of the days in which we all lived as brothers, under one god, in one tent. We wanted to prove to the world that a jew and a palestinian can work peacefully together and hopefully inspire. Our employees set the most beautiful example of our ideals: men, women and LGBTQ people from Israel, Palestine and the entire middle east, Asia and Africa, all working together under one roof in harmony with peace and mutual respect.
