As the name suggests, corn Tortillas are made of corn. A tortilla’s color simply depends on the variety of corn used. White, yellow, blue, and even red tortillas can all be authentic.
What really matters is how the tortilla is made.
Traditional tortillas are made through a process called nixtamalization. Whole dried corn is cooked and soaked with lime (calcium hydroxide) before being ground into fresh masa. This ancient technique, developed thousands of years ago in Mesoamerica, gives tortillas their distinctive aroma, richer corn flavor, soft texture, and improved nutritional value.
That’s why we choose to serve nixtamal tortillas. Not because they’re trendy, but because we believe great tacos start with a great tortilla. It’s a tradition worth preserving—and one you can taste in every bite.
