Say hey to our pastry chef 👨🏻‍🍳🇫🇷

Odalrich is born and raised in Paris where he also started his career working in the most prestigious hotels, as Hôtel Thoumieux with Sylvestre Wahid and Park Hyatt with Jimmy Mornet.
Then he continued by working by the side of Jessica Préalpato winner of the “World’s Best Pastry Chef 2019” at Hôtel Plaza Athénée.

Odalrich decided to seek new adventures and challenges therefore he went to Denmark to work with Rasmus Kofoed at Geranium.

At Holly we have the pleasure to taste Oldalrich’s amazing desserts and his skills in the kitchen 😋

Say hello to one of our headchefs 🇫🇷👋🏽

Alexander is from the rich region of wine in France, Jura.
He started his career at a young age. He knew that he wanted to work with the biggest names in the industry. Alexander succeeded and started his journey in Monaco at Le Louis XV - Alain Ducasse. After this he worked with Anne-Sophie Pic for five years and to finish his journey he went to work in Denmark at Geranium as a Senior Sous Chef with Rasmus Kofoed.

He is very proud of his hometown and has promised to bring plenty of Jura flavors into the kitchen of Holly 🌱🍇

Say hi to one of our head chefs Xavier Fays 👋🏽

Xavier grew up in Quebec, Canada, surrounded by flour and chocolate as his parents are bakers and his sister a chocolatier. He went to France to work with Édouard Loubet, a two Michelin star chef and from there to Anne-Sophie Pic winner of the “World’s Best Female Chef in 2011” where he met Alexander for the first time. Xavier moved then again - this time to the kitchen of Clare Smyth winner of the “World’s Best Female Chef 2018” after two years Xavier decided to seek new experiences and he decided to work in Denmark at Geranium.
Now we are proud to have Xavier as a co head chef (with )at Holly 😍
