A dish that challenges expectations: Silky barley koji porridge, infused with lime leaf, featuring koji from . It’s layered with a rich, lentil-based mascarpone seasoned with umeboshi, then topped with lacto-fermented plums, vibrant coriander seeds from , green oxalis, and Tonburi seeds—often referred to as “land caviar.”⁠

But here’s the thing—it’s not caviar. And that’s exactly why it’s interesting. In a world where everything is labeled caviar or truffle, we choose to explore beyond. 🌱
