Francisco Gonzalez, Dilla Alghe – Costa Rica 🇨🇷

Maybe you already know Aquiares Coffee Farm? If so, you might also know Francisco Gonzalez. Through the “Friends of Aquiares” initiative, Aquiares helps smaller producers reach export markets and create greater value from their coffee.

This lot comes from Francisco Gonzalez’ Patalillo Farm in the renowned Tres Rios region of Costa Rica. The coffee is a Dilla Alghe variety, originally from Ethiopia, and processed using the Red Honey method to enhance its natural sweetness and complexity. 🌱

We have light roasted the beans to highlight a fresh and elegant cup. Expect notes of fresh almonds, green apples, and cucumber, creating a vibrant, clean, and balanced flavour profile.

Perfect for filter brewing or as a bright and refreshing espresso, this coffee delivers lively acidity, delicate sweetness, and a crisp finish. ☕

Every Wednesday we cup all coffees from our current lineup, as well as coffees we have test-roasted. We use our different scoring systems to gain an understanding of each coffee and the type of profile it has 🤭
Our cupping sessions are not only for our roasters. They are an important gathering point for all employees in the company. From technicians to the e-commerce team participate and help taste the coffee. This creates a better understanding of the products and everyone's opinions matters!

We went to Kenya & Ethiopia! 🇰🇪🇪🇹

Back in January, Christian & Emil - our coffee roasters - went on a two-week journey to some of the most important coffee-producing countries in the world. During their trip, they met producers, farmers, and passionate coffee people 🌱

The goal of the trip was simple: to see where the coffee is grown and speak with the people who play an extremely important role in coffee cultivation - before the beans are ready to be roasted at Yellow Bird Coffee🐤

Soon, we’ll be introducing some of the coffees we purchased on the trip, and we’re more than excited!
