Only 5 seats left: Chateau Lafleur Winemakers Dinner – March 24th

On March 24th, in collaboration with ATOMWINE, we welcome winemaker Omri Ram from Chateau Lafleur in Pomerol - an estate ranking alongside Petrus and Romanée-Conti.

The menu is finalized.

At a long communal table, we’ll serve:

- Snacks
- Gold Selection caviar with celeriac, razor clam and toasted kelp
- Rehydrated beetroot with miso, wild garlic and horseradish
- North Sea turbot cooked on bread with braised oxtail and parsley-garlic sauce
- Label Rouge quail with yellow beetroot, dukkah and sauce blanquette
- Selection of French raw milk cheeses with Palægade’s butter-toasted rye bread

Congratulations to Mikkel and Amalie 🥂

On February 12th, our two apprentice waiters completed their final exams — walking away with bronze and gold medals. A well-deserved recognition for two young people who have put an enormous amount of work into their training at formel B.

They met during their first school term — quickly realised they had a lot to learn from each other, and have since grown into a strong professional partnership. With access to Andreas’ expertise, Rune’s restaurant and a wine cellar full of possibilities, they’ve had the perfect environment to develop their craft.

Next up is the sommelier exam at Vinakademiet — followed by Court of Master Sommeliers.

Amalie will continue her journey at formel B, while Mikkel heads to lilleB for the summer season — before returning home again.

They’re fully qualified now. And we can’t wait to see what comes next. 🍷

Den 24. marts kan vi i samarbejde med ATOMWINE byde vinmager Omri Ram velkommen fra et af Bordeaux’ mest mytiske slotte - Chateau Lafleur i Pomerol.

Omri er højre hånd til ejerfamilien Guinaudeau og vil dele ud af sin dybe viden om terroirerne i Pomerol og kunsten bag vinene fra denne ejendom, der rangerer på linje med Petrus og Romanée-Conti.

Ved langbord serverer vi en 5-retters menu med sæsonens allerbedste råvarer, ledsaget af en exceptionel række af vine - en sjælden mulighed for at opleve disse legendariske flasker i selskab med manden bag.

Meet William – Sous Chef at formel B

William is 23 years old and newly appointed sous chef at formel B. He has been part of the team since August 2024, but his story with food goes back much further.

He grew up in a restaurant family. The kitchen was the gathering point, and what started as a part-time job became a passion. This is where the foundation was laid.

After EUX at culinary school – with some doubts along the way – he was truly captivated. At a gastropub, he learned the à la carte craft and gained the creative tools. The move to AOC was a culture shock: stringency, discipline and classic kitchen training in its most uncompromising form. Tough, but formative.

In the summer of 2024, he worked in the kitchen at lilleB before moving to formel B. A place he has always known from his childhood in Frederiksberg. It was the values and style that secured the decision.

William’s food style? Minimalist and precise. An expression that matches formel B – and himself.

When he’s not in the kitchen, he trains. The body demands it when you’re on your feet all day.
