Hare rolled in pork caul fat, enclosing Neapolitan friarielli (cime di rapa) and an emulsion of herbs and offcuts.
The bones give a dark, patient sauce. At the side, a paste from the skins of pressed oranges, to be taken sparingly with the meat—added little by little, like wasabi, shaping each bite.

We have been working for a while to improve our cheese plate selection, we wanted to have a different approach, having different milk sources for each cheese (cow, goat, buffalo & sheep), different textures and aging times. But that was still not enough. We started to do our own cheeses and finally we can present to you a cheese platter that is special for us and for sure unique.
We are really proud of our version of camembert, that thanks to the beautiful milk from .gaardmejeri , it tastes amazing.

The ideal candidates are people with experience, good vibe and passionate about gastronomy.

For the front of house we are searching someone that will reflect the Paesàno vibe, possibly with wine experience or passion.

As chef de partie we are searching for a passionate person that understand Paesàno and Davide concept, clean and organized. Pastry skills are appreciated.

Cheese 🧀

We have been working for a while to improve our cheese plate selection, we wanted to have a different approach, having different milk sources for each cheese (cow, goat, buffalo & sheep), different textures and aging times. But that was still not enough... We started to do our own cheeses and finally we can present to you a cheese platter that is special for us and for sure unique.
We are really proud of our version of camembert, that thanks to the beautiful milk from .gaardmejeri , it tastes amazing.
