A fine dining experience is the core of the restaurant – but keeping with the idea of Holistic Cuisine the servings are augmented by performers, installations and the architecture itself. Most of the drama at Alchemist actually happens on the plates, where layers of subtext, both humorous and serious, line the 50 “impressions” that constitutes the Alchemist experience. Rasmus Munk’s gastronomy is Nordic at heart but far reaching in terms of inspiration and flavours. Let’s set things in motion.

An evening that goes far beyond one night. 🧡 ⁠
This year’s charity dinner and auction will help turn care into action with DKK 3.2 million raised, supporting more than 125,000 warm meals across Denmark for the homeless.⁠

For those who rely on these meals, it’s more than food.⁠

AI — a tool or a trap?⁠

When does a tool start becoming an active collaborator?⁠
Who owns an image once it’s been changed, remade, or reimagined?⁠
Who owns art when many hands, both human and machine, are involved?⁠

During Convergence, our studio team experimented with photos of dishes from our guest restaurants, transforming them with the help of AI into living tableaux that were projected inside the planetarium dome during the dinner experiences. ⁠

Now we are asking ourselves if they are still photographs of food, or have they become something else entirely? Where does the original end, and where does the new work begin? And are we in fact facing a future where these questions will become meaningless?⁠

Thank you so much Falstaff Nordics for selecting Alchemist as the Best Restaurant in Denmark and awarding Rasmus Munk with the award Chef of the Year. We are humbled and very proud of this recognition 🙏 ⁠

During the Falstaff seminar, our General Manager Lykke and Assistant General Manager Jogi also took the stage to speak about the design and growing importance of our inhouse NoLo-beverage program. ⁠

Recently, we welcomed 300 students to Alchemist and JunkFood to explore both gastronomy as an art form, and the future potential of green gastronomy 🌱⁠

Through the projects "Køkkenkunst" (Kitchen Art), and "Grøn Dag" (Green Day) we were able to invite young minds from twelve schools to experience holistic cuisine at Alchemist, or cook delicious green meals together with our chefs at JunkFood. ⁠

Exchanging ideas and hearing the kids’ perspective on our work has been a lot of fun, and a huge inspiration for all of us.⁠

Impression No. 4: Space Bread ⁠
The idea for the impression ‘Space Bread’ builds on the concept of hyper-aeration, inspired by a PhD-project in collaboration with – exploring food designed for space travel. Our version is made with 10,000% aerated 10-year-old soy sauce from Kyoto, topped with Royal Belgian Oscietra caviar.⁠

Apart from serving it at the restaurant, we are now using the same technique to create snacks for hospitalized children, in our role as culinary partner for and their new Children’s Hospital: Mary Elizabeth Hospital.⁠

By aerating and freeze-drying, we create a super-crunchy, ultra-brittle texture that dissolves instantly in the mouth. The result can be flavored in many ways and satisfy patients’ cravings for something crispy, even when swallowing is difficult due to a condition or treatment.
