Poolküpseks röstitud pardirind, magushapu aromaatne põldmarjakaste, siidine juurselleripüree ja foie gras’ vaht, mis lisab roale elegantsi.

Kvati is a modern take on a traditional Georgian dish from the Imereti region.

Duck breast is seared to a medium doneness, paired with makvali sauce made from blackberries for a sweet-tart, aromatic accent. Celery root purée adds smoothness, and a light foie gras espuma brings depth and richness to the plate.
