Rabbit with white wine and thyme.
Thirty years ago, Piers Dutton, the first cook and owner of La Torre del Visco, created a recipe with what the Matarraña had to offer: rabbit, thyme, white wine.
Nothing more. Nothing less.
Since then, every cook who has passed through this kitchen has made their own version. And every one of them has respected the original.
Because some dishes are not meant to be changed, only interpreted.
Guests who have been coming for three decades still ask for it.
