Not the best pic, but they smelled soooo good, was desperate to eat them! Individual banoffee inspired cakes: banana sponge, Swiss meringue vanilla buttercream, Dulce de leche caramel, caramelised banana inside, banana chip and more buttercream and caramel on top. Made as a taster sample for a potential wedding cake tier.

You will not ‘macaron’ choice by eating macaron! Only my 3rd attempt. My 2nd attempt (also yesterday) was the French meringue method and turned out like pancakes. This attempt with the Italian meringue method worked out much better. I thought they’d spread out more so I didn’t flatten the tips, hence the pointy tops- something to work on for next time. Those feet make me happy though!
