Ever wondered who’s behind the food at GEM? 👀

Well, meet James! 👨‍🍳 The head chef, owner, recipe creator and the man behind the madness!

You might be wondering where the name GEM comes from. It’s actually a little more personal than you might think. GEM is named after the three most important girls in James’ life – Georgina, Etta and Maggie. ❤️

James brings a little bit of the world to Ingleton, with recipes inspired by years spent travelling and living across South East Asia. Expect bold flavours, interesting ingredients and dishes that are a little bit different from your usual café fare.

From creating recipes and making sauces to baking our own bread and getting everything ready for service, there’s a lot that goes on behind the scenes to bring GEM to life.

We’re all about good food, good moods and doing things a little differently.

So next time you’re tucking into brunch at GEM, you’ll know a little more about the story behind it!

We will be lighting up the pool and surrounds. The old waterfall will become a photo booth with skeletons, spiders all things spooky. Spooky music will be playing too.
