There’s a gorgeous, sunny week on the horizon full of long lunches, little offers for our local diners offers and perhaps most excitingly, the smell of fresh pastries drifting out onto the street.

If you’re part of our Diners Club, keep an eye on your inbox this week. We’ve got something special coming your way to celebrate the start of summer at Chef’s Table, where the vibe is set to special occasions - be they spontaneous or thoughtfully planned, with seasonal tasting menus, slower evenings and lunch offers to make the afternoon feel just as special as the evening.

And speaking of slower afternoons, from next week onwards the lounge will be open during lunch hours on Fridays, Saturdays and Sundays for lighter bites, cheeky cocktails and those “we’ll just stay for one” sort of afternoons, as we continue working towards all day dining. New seasonal dishes hitting the menu this week, so keep your eyes on the socials!

And then there’s the big one, officially opens its doors this Friday from 10am. Expect pastries, breads, artisan coffee and breakfast from early morning onwards, whether you’re grabbing something to go or settling in kickstart to the day. We’ve poured a lot into this one (literally and metaphorically) and we can’t wait to finally see it open.

Lots happening this week, and we’re working hard to get everything just right…. We’d love to see you all this week, whether you fancy coming in for a yap over a coffee or cocktail, or just giving us a wave of encouragement from the window 👋 Exciting times on the horizon!

💥IT’S OFFICIAL 💥 WE ARE OPENING NEXT FRIDAY!

Thought this day would never come? So did we, but here we are…

Next Friday at 10am, the doors are opening, the coffee’s pouring and we’ll be kicking things off with two days packed with breakfasty brunchy lunchy plates, pastries, and provisions.

Expect a stacked pastry cabinet and shelves lined with breads delivered fresh daily from our farm bakery, a fridge full of chef-made bits prepared daily by the team, and a menu of hot and cold breakfast favourites from the kitchen. Add in great coffee, tea, a few breakfast cocktails, and a couple of surprises for when the drinks menu drops. Hot food from the kitchen will be served until 2pm… or until Liam runs out of eggs.

Over the coming weeks we’ll be expanding the range with more pantry bits, more chef-made products, and plenty more reasons to “just pop in” and accidentally leave with a full bag (and belly). If there’s something you’d LOVE to see on the shelves, let us know in the comments 👇👇👇

New season, new menu. With a few new desserts hitting the menu this week we’ve given our six course “taste of the menu” a little refresh.

If you’re dining this weekend, you’re welcome to join us in the lounge for a drink before (or after) your meal. If you’re after pre-dinner drinks, you’ll find a brand new cocktail menu this week and an expanded whisky selection for those seeking a nightcap and the perfect end to your evening.

A week on from our evening with and , and we’re still thinking about what a special night it was.

A huge thank you to .ambassador for guiding us through such an extraordinary selection of wines from the Antinori portfolio with warmth, charm, and endless knowledge.

We rarely stop to take photographs during our events, so we’re especially grateful to our wonderful guests who kindly allowed us to capture a few moments from the evening and helped make it all the more memorable. Thank you also to for documenting the night so beautifully.

Over the past few weeks we’ve also given the dining room a gentle refresh with new paint, wallpaper, and lighting, and we’re incredibly proud of how the space is feeling as we head into the season ahead.

Spotlight on our favourite vegetarian dish of the moment - cauliflower roasted with za’atar, glazed in tamarind and Aleppo chilli for that sweet and sharp balance.

Served on a base of warm queen bean hummus, pickled cauliflower, and a roquito pepper salsa made with red and yellow sweet peppers, inspired by Liam’s late-night cravings from a certain pizza chain….

A toasted almond and preserved lemon dressing brings everything together, with a crisp tuile made from the trim of our sourdough, spiced with fennel and chilli.

The May Festival returns this week, and with it, the first proper taste of racing season in Chester.

When the last race is run, the lounge is open for those looking for a civil end to their afternoon. Champagne on ice, a selection of plates to whet the appetite, and a calm spot to land after a day at the track.

Menu drop >>> Every change in the weather brings a new addition to the menu as something is always coming in (or out) of season. Liam and Jay have been back in the kitchen refining, tasting, and building a new lunch menu reflecting what’s coming in and what they’re keen to eat this time of year.�
Delicately spiced broths and sauces, vibrantly layered vegetable dishes and an enoki tempura as delicious as it is eye catching. It’s the kind of menu that works whether you’re dashing in for a quick bite or lazing over a long lunch

Sundays get an extra addition too with a traditional roast served alongside our menu as a main course and included in our lunch offer.

And if you’re staying for dessert (as you should), the chocolate bread & butter pudding is worth the trip alone—white and dark chocolate folded through brioche, soaked in custard with compressed strawberry, vanilla ice cream, and micro basil from . An absolute showstopper, and at £5 for that third course, easily the best decision you’ll make all week.

Tucked inside Chef’s Table on Pepper Street, our newly refurbished lounge offers a different way to spend an evening in Chester. Softly lit, intimate, unhurried.

Begin with oysters and caviar, or graze on curated snacks designed to pair perfectly with a glass of champagne. From there, the menu unfolds into small plates, classic salads, seasonal ‘on toast’ selections, and our lounge signatures - lobster tail thermidor and a iberico bacon wagyu burger with pommes frites.

A refined list of classic wines and cocktails runs alongside, shaping a space made for lingering - a pause from the bustle of the day, whether for conversation, celebration, or something in between.

Open from 6pm, Wednesday to Saturday, with extended hours arriving mid-May.

Twelve years today. It’s been a journey to say the least - refurbishments, restructures, rising costs, a pandemic that none of us could have predicted, a few bold new ventures that flourished, and a couple that taught us some hard lessons along the way. Like most restaurants who have been around for a while, the road hasn’t always been smooth but it has always been forward.

Looking back, what stands out is how much we’ve changed and evolved over the years. We’ve constantly pushed ourselves - sometimes by choice, sometimes by necessity - to keep improving what we do. Menus have changed, rooms have been redesigned, teams have come and gone… Some ideas have grown into something far bigger than they first appeared on paper and some have ended up at the bottom of the wastebasket. But through all of it the heart of what we do has stayed the same. What we want to give our guests, and the values that sit behind our ethos, haven’t really changed at all.

April always seems to be the month where we announce a big change - whether it’s an addition to our menu offering, or just an improvement to our premises and this year has been no different. Last week we reopened our lounge after a huge refurbishment, with a refreshed menu and a new concept that gives people another way to enjoy and experience what we do at Chef’s Table.

And next month we turn the page again as we prepare to open , something we’re incredibly excited to (finally) share with you.

To everyone who has supported us along the way whether you’ve been coming in since the early days or only discovered us recently, thank you for sticking with us. It’s a precarious time for our industry and restaurants are nothing without the people who fill the tables.

Here’s to the next twelve.
