We have been busy working on our new summer menu, using incredible ingredients, such as John Dory, Môn lamb, gooseberries, Henryd courgette, scallops, strawberries and langoustines to tease a few!

Barbecued Scallop & Seaweed

Using native seaweeds and sea vegetables found on the coast here in Conwy, we carefully prepare all of these using various cooking and preparation methods such as braising and pickling.

The hand dived scallop is simply barbecued and rested in a sea grass butter. The dish is then finished with a sea lettuce broth.
