South Indian cooking was built this way long before anyone put it on a wellness list.

Lentils in the dal and the dosa batter. Fibre and plant protein, fermented for easier digestion.

Chickpeas ground into flour and folded through the curries. Slow-release energy, kind on the stomach.

Turmeric, cumin, black pepper, curry leaves. Not for show. Every spice earns its place, and the body knows it.

Coconut instead of cream. Lighter, and the reason you leave without the bloat.

None of this is a health menu. It is just how the food is made in Kerala, Tamil Nadu and Karnataka. Fully gluten free, fully nut free, the way it has always been.

The three foot dosa.

A dosa is a fermented rice and lentil crepe, crisp at the edges, soft in the middle. South India has been making them for centuries. We make ours three feet long.

Choose your filling. Lamb, chicken, seafood, paneer, or spiced potato. Or take it classic with Mysore chutney.

Served with sambhar, thengai chutney and takali chutney. Naturally gluten free, the way it has always been made.
