Grilled Shrimp Bowl with Corn Salsa and Avocado 🍤🥑
Smoky grilled shrimp meet cool avocado, crisp corn salsa, and a creamy herb sauce. Each bowl layers warmth, freshness, gentle acidity, and just enough spice.
🛒Ingredients :
• 1 lb large shrimp, peeled and deveined
• 1 tbsp olive oil
• 1 tsp paprika
• 1/2 tsp garlic powder
• 1/4 tsp salt
• 1/4 tsp black pepper
• 1/4 tsp cayenne pepper, optional
• 1 cup frozen corn, thawed
• 1/2 cup red onion, diced
• 1/4 cup cilantro, chopped
• 1 jalapeño, seeded and minced, optional
• 1 lime, juiced
• Salt, to taste
• 1/2 cup mayonnaise
• 1/4 cup sour cream
• 1 tbsp cilantro, chopped
• 1 tbsp lemon juice
• 1 garlic clove, minced
• 1/4 tsp salt
• 1/4 tsp black pepper
• 1 avocado, sliced
• Sesame seeds, for garnish
• Green onions, chopped, for garnish
👩🍳How to Make It:
1. Season the Shrimp
Toss the shrimp with olive oil, paprika, garlic powder, salt, black pepper, and optional cayenne. Let the seasoning cling to the surface while the grill heats.
2. Build the Corn Salsa
Combine the corn, red onion, cilantro, optional jalapeño, lime juice, and salt in a bowl. Fold gently and set aside so the flavors remain bright.
3. Whisk the Creamy Sauce
Blend the mayonnaise, sour cream, cilantro, lemon juice, garlic, salt, and black pepper until smooth. Refrigerate until the bowls are ready to assemble.
4. Grill Until Just Tender
Cook the shrimp over medium heat for 2 to 3 minutes per side. Remove them as soon as they are opaque and lightly charred.
5. Layer the Bowls
Divide the grilled shrimp, corn salsa, and avocado among serving bowls. Drizzle with the creamy sauce and finish with sesame seeds and chopped green onions.
