Well…this is pretty bloody special.

Every growing coffee company dreams of creating a signature blend. Today, we launch our second, and it’s a single origin!

It feels surreal to have two proprietary roasts sitting proudly in the Dear Coco line-up. It’s a huge milestone for our little Aussie-owned coffee company, and one we’re incredibly proud.

To think these roasts carry the names of the two people who started and grew Dear Coco around a simple belief that great coffee is a birth right.

Say g’day to No. 2 Sam’s Single. Lovingly named after our co-founder and Chairman, Sam.

This one’s an absolute ripper. If you love your coffee black, this roast sings. But don’t let that fool you, it also makes a ridiculously good flat white, packed with milk chocolate, sticky caramel and red fruit. It’s a proper single origin.

It joins No. 1 Ant’s Blend, our original signature roast, our glorious all-rounder that runs through our grinders.

Two founders. Two personalities. Two signature coffees. Two mates who reckon great coffee is worth obsessing over.

“So what’s your espresso recipe?”

This is my favourite question to ask baristas when I go into a coffee shop (which isn’t a Dear Coco 😝)

It tells you everything you need to know about their coffee programme. If they can answer the question immediately, without pause then you’re in good hands. If they stumble and/or can’t answer it, run a mile.

It would be like asking a pastry chef their soufflé recipe and them not knowing. You really have to know otherwise you’re flying blind, impacting flavour and making consistency impossible.

As an example, we serve double ristretto which is 20g dose (ground coffee), 28-30 seconds extraction, 20g yield (liquid espresso). This ratio is 1:1.

A traditional double espresso recipe might be 18g dose with 36g yield (ratio 1:2). And there’s minor variations depending on the flavour preference of the shop.

I don’t know about you, but my biggest personal development area is embracing (and beating) negativity.

I’m a naturally positive person. As a result I’m drawn towards positive things. Where possible, I ignore or avoid the negative stuff. I live my life in a bubble to protect myself from unnecessary harm, and save my energy for the fights I truly need to fight.

But the reality of business ownership is there’s negativity. It’s everywhere. You can’t avoid it entirely, at best you can try and minimise it. But it will always be there.

The reality I navigate everyday with entrepreneurship, above almost everything else, is dealing with problems.

Yes, there’s an over-arching positivity to the company we’re building - it’s a glorious business with unbelievable people. But reality is 90% of my time is solving problems and 10% is everything else.

So my own challenge, and I suspect the challenge of many of you, is elevating gratitude as a way to combat the tough stuff. Problems will never go away, so it’s about fighting bad with good, and staying aware that on balance, my life is extraordinary.

Good luck wrestling your daily demons my friends. Let’s win the day.

Dads, we don’t talk about it much. The pressure, the worry, the responsibility. The constant feeling that we should be doing more. That it will all fall apart if we put our shield down.

But every day, we show up and do our best with others in mind.

We love, guide, protect, teach, and try our very best to raise kind, decent, curious humans.

A few weeks ago, I found myself creepily standing in Borough Market watching a team of oyster shuckers.

I watched for far longer than was socially acceptable.

Hour after hour, they repeated the same movement over and over again. A physically demanding, highly repetitive job.

But what stood out wasn’t their skill. It was their attitude. They were smiling, chatting, engaging with customers and creating an experience that felt special for every person they served.

Psychologists talk about how mastery isn’t built through constant novelty. It’s built through doing simple things consistently well. Elite athletes, musicians and performers spend countless hours repeating the same fundamentals because they know excellence lives in the basics.

It got me thinking about finding purpose in repetition.

The tasks within coffee shops may be repetitive for us, but the experience is unique for the customer.

Whether it’s extracting espresso, texturing milk, stocking shelves or wiping tables, the small things matter. What feels routine to us might be the best part of someone else’s day.

Here’s a question we love to keep sharp amongst the repetition...

“If this was the customer’s only coffee this week, how can I make it count?”

Excellence isn’t built through occasional big moments. It’s built through hundreds of small moments done well.

Here’s to the Dear Coco baristas, the best damn group of 30 humans I know.

Have you ever been camping?

Not the Instagram version. Proper, down-and-dirty camping.

The one where you spend days planning, packing and organising. Where making something as simple as a morning coffee suddenly requires immense effort.

You quickly realise that the routines you take for granted at home only work because everything is already there.

That’s the reality of a coffee truck.

Every day, we create a fully functioning coffee shop in a place where no coffee shop exists.

Before the first coffee is brewed, the truck has to be loaded and driven to site. It’s levelled on ramps, brought to life with power, stocked, dialled in and set up for service. The milk has to stay cold, equipment constantly monitored, displays set out, and everything ready for an 8 hour service.

We’re essentially setting up and breaking down a fully functioning coffee campsite every single day.

The beauty of a coffee truck is that it feels effortless to the customer. That’s exactly how it should be. But beneath the swan gliding across the pond, there’s an enormous amount of work that most people never see — and shouldn’t have to.

So the next time you’re tempted to grumble about the price of a flat white from a coffee truck, remember this…

Yes, we may not be paying rent like a fixed coffee shop. But we’re transporting an entire coffee shop, setting it up from scratch, running it, and packing it all away again at the end of every day.

A bricks-and-mortar coffee shop owner doesn’t have to move their entire operation twice a day.
The costs are different, because the logistics are different.

In many ways, you’re not just paying for the coffee. You’re paying for the luxury of great coffee exactly where you are, in a place where coffee wouldn’t exist unless we put it there.

That’s the magic of coffee trucks. An oasis in the coffee desert.

Today my eldest daughter Malia finishes her A-Level exams, bringing to an end her High School years.

I don’t know about you, the older I get the more emotional I become. Today I have so many visions flying in and out of my mind.

Taking Malia to daycare and Primary School in Australia. Teaching her spelling and tying her shoes on the bottom step. Re-locating the family to London and finding her feet in a new system.

I see her so diligently studying late into the night, sitting in the dark under her desk lamp, wanting to live up to the standards she set for herself.

The endless study lists, mock exams, book marks, pieces of paper, whiteboard notes, used workbooks. The self-disciplined effort she has expelled over so many years inspires the heck out of me.

The result, she’s on track to walk out those school gates with the highest grades possible to achieve - three A stars.

I’m getting teary just typing this.

Boy oh boy I’m proud of you kiddo. Enjoy the feeling of a huge chapter closing this afternoon knowing you did it right.
