I’ve been creating a whole batch of new Sri Lankan recipes the kind to see you through summer and into autumn. And I think you’re going to love them.
Mango acharu & feta salad. Fresh mango pickle, sweet and spicy with a dash of lime, folded through feta, tomatoes, cucumber and salad leaves. Divine.
Chickpea sundal, the nifty little number you’ll want in your back pocket. Chickpeas fried in spices with lots of shredded coconut. It’s a Sri Lankan street food snack, but I’ve been serving it up at my summer barbecues.
Roasted aubergine raita. I know raita isn’t strictly Sri Lankan. But roasted aubergine topped with tempered onions, garlic, ginger, curry leaves and spices, laid onto full-fat Greek yoghurt and scattered with pomegranate? Now that takes the summer dip to another level.
And a lamb & aubergine curry, inspired by one I had at Rambutan and loved so much I had to know I could make it whenever I wanted. I’ve been testing it with my bestie, Rosh’s very own Hop & Roll roasted Sri Lankan curry powder. And dang, it’s good.
