Today, we had the privilege of hosting the wake reception for David Moore.

David had been a customer at The Tapestry since the early days of our journey. Over the years, he became much more than a guest; he became a friend. He was a true gentleman, known for his warmth, his laughter, and the kindness he showed to those around him.

It was an honour to welcome David’s family and friends today as they came together to celebrate his life and share their memories. We worked hard to ensure that everyone felt comfortable, cared for, and at home, and I truly believe we achieved that.

It was a beautiful sunny day. We served padrón peppers, chorizo, and other favourites, and I couldn’t help but think that, had David been sitting among us, he would have been enjoying the conversations, the laughter, and perhaps ordering a cortado while putting the world to rights with family and friends.

David, thank you for your friendship and for the many moments we shared over the years. You will be remembered fondly by all of us here at The Tapestry.

Here’s a toast to you, my friend.

Today I was in the kitchen and finally decided to make a banoffee pie for dessert. It turned out to be a very productive day, ticking quite a few things off the list, but making this pie was something I had been meaning to do for a long time.

As I was putting it all together, it took me back to the days when I first started working with Neil and Eddie at the Treehouse. Funny how food can bring back such wonderful memories. Those were great times, full of hard work, laughter, friendship, and lessons that have stayed with me throughout my career.

After more than 30 years working in kitchens and restaurants, I’ve been fortunate enough to meet some incredible people and create amazing memories along the way. So I’m tagging a few old friends here as a little reminder of the good old days.

Hello to everyone, and wow… time really does fly. Here’s to good food, great friends, and all the memories we’ve made together.

How to pour the perfect pint of Estrella Galicia 🍺

1️⃣ Start with a clean glass.
2️⃣ Hold the glass at a 45° angle.
3️⃣ Open the tap fully and keep the nozzle close to the glass (without touching it).
4️⃣ As the glass fills, slowly straighten it up.
5️⃣ Finish with a nice creamy head on top.

How to Cook Spring Greens Perfectly Every Time

In today’s video, I’m showing you my simple restaurant method for preparing spring greens.

✅ Wash the greens thoroughly.
✅ Chop the leaves finely.
✅ Bring water to the boil with a little oil and salt.
✅ Add the greens and cook for 3–5 minutes.
✅ Drain and cool.
✅ Store in the fridge if preparing ahead.
✅ Reheat in a frying pan with olive oil, sea salt, and garlic.
✅ Serve as a healthy and delicious side dish.

You can also add a splash of soy sauce for extra flavour.

We’re incredibly excited for what’s coming next. As we work behind the scenes on improvements to our kitchen and prepare for a fresh new chapter, the pub will be temporarily closed.

But we’re still very much open for special moments.

We’re currently taking bookings for private functions, including large group gatherings, wake receptions, and wedding celebrations. If you’re planning something special for 30 guests or more, we’d love to host you and make it memorable.

Picanha on the chargrill this weekend 🔥

What a pleasure to work with such an incredible cut. Traditionally done the Brazilian way over the barbecue, but on the chargrill it absolutely shines—perfectly medium rare, with that beautiful layer of fat melting into the meat, creating unbeatable flavour and colour.

Once underrated here in the UK, picanha is finally getting the recognition it deserves. While ribeye and fillet have always been favourites, this cut is winning hearts fast—and for good reason.

Served simply with crispy fries, fresh chimichurri, and a light salad… and judging by the reactions this weekend, it’s been a real hit.

Back in action 💥

After three weeks closed, today was all about getting the pub ready again — clearing, setting up, and pulling everything together for a big one…

Tomorrow afternoon we’re catering for 170 people, and we couldn’t be more excited to be back doing what we love 🍽️🍻

It’s been a full-on day, but everything is now in place and ready to go. Massive shoutout to the team who worked hard behind the scenes to make it happen — you smashed it 👏

POV: I finally have a day off from the restaurant… and instead of resting, I’m at home making one of my all-time favourite desserts — a tres leches cake.

This cake is simple, indulgent, and made for sharing. What makes it special is the sponge — there’s no butter and no oil, so it bakes light and slightly dry. That’s exactly what you want, because it soaks up all that rich tres leches milk beautifully, turning it into something incredibly soft and irresistible.

🍰 Tres Leches Cake Recipe

🛒 Ingredients

For the sponge:
• 240g flour
• 2 tsp baking powder
• 1 tsp salt
• 5 eggs (separated)

For the tres leches soak:
• 2 tins condensed milk
• 2 tins evaporated milk
• 1 cup milk
• 150ml Baileys (optional)

For the topping:
• 1 pint whipped cream
• Fresh strawberries, sliced

👨‍🍳 Method
1. Preheat the oven to 180°C and grease a 20cm x 30cm tray with butter.
2. Whisk the egg whites until light and fluffy. In a separate bowl, whisk the egg yolks.
3. Mix the flour, baking powder, and salt, then gently fold everything together to keep the mixture airy.
4. Pour into the tray and bake for about 30 minutes, until golden and set.
5. Mix together the condensed milk, evaporated milk, milk, and Baileys to create the tres leches sauce.
6. Once the cake is baked, poke holes all over the sponge and slowly pour the milk mixture over, allowing it to soak in fully.
7. Top with whipped cream and finish with fresh strawberries.

🌿 House Chimichurri Recipe 🌿

We’ve been making big batches of our fresh chimichurri here at the pub, and it’s too good not to share…

🧄 Ingredients
• 1 whole onion
• 3 shallots
• 4 cloves of garlic
• 1 cup olive oil
• 1 cup red wine vinegar
• 60ml water
• 1 tbsp salt
• 1 tbsp chilli
• 2 tbsp oregano
• 40g coriander
• 40g flat parsley
• 3 stems fresh mint

👨‍🍳 Method
Chop everything nice and fine, throw it all into a big bowl, and mix well until fully combined. Let it rest for at least 4 hours so all those beautiful flavours come together. Keep it in the fridge — it’ll last up to 4 days.

Perfect with meats, veggies, or just about anything 🔥
