People often see the food and the finished table.

What they don’t always see are the emails, creating menus, proposals, shopping lists, timelines, supplier orders, packing crates, loading cars, carrying boxes, setting tables and countless little decisions that happen beforehand.

For every few hours of service, there are usually days of preparation behind the scenes.

A little glimpse into the less glamorous side of being a caterer and private chef and honestly, one of my favourite parts of the job.

Yesterday’s garden party at the gorgeous Olden Garden 🌿

A menu inspired by some old Maison d’Être & Maison Bleue favourites: smoked salmon bagels, sausage rolls, seasonal tarts, summer salads, homemade cakes and plenty of Maison Earl Grey iced tea.

Vietnamese Coffee Tiramisu ☕️
A little Vietnamese twist on an Italian classic.

Layers of coffee soaked sponge fingers, mascarpone and cream, with condensed milk and strong Vietnamese coffee.

Recipe below ↓
3 sachets Vietnamese coffee
300ml boiling water
4 egg yolks
200ml condensed milk
250g mascarpone
600ml double cream
320g sponge fingers
Cocoa powder.

- Dissolve the coffee in boiling water and let cool.
- Whisk egg yolks and condensed milk over a bain-marie until pale and fluffy.
- Whisk in mascarpone until smooth.
- Whip cream to soft peaks and fold through.
- Dip sponge fingers briefly in the coffee and layer in a tray (25 x 30 cm)
- Spread over half the cream mixture and dust with cocoa.
- Repeat with another layer of sponge, cream and cocoa.
- Chill overnight (or at least 12 hours).

The next day, cut generous slices and enjoy ☕️🤎

My absolute favourite roast chicken dish ✨

Roast chicken with soft carrots & potatoes, and a sharp, herby salsa verde on top…

save this for later, it's so good!

serves 4

ingredients

for the chicken & veg
4-8 chicken legs / thighs (skin on)
800g baby potatoes, halved
6 carrots, cut into chunks
4 banana shallots, peeled & halved
olive oil, 150ml of white wine
salt & black pepper

for the marinade
2 small tin anchovies in oil (50g for a tin)
juice of 2 lemons
1 tbsp dijon mustard
2 garlic cloves
olive oil
black pepper

for the salsa verde
1 bunch flat parsley
a small handful mint
2 tbsp capers
4 cornichons
1 shallot (finely chopped or marinated in red wine vinegar)
1 tsp dijon mustard
1 garlic clove
olive oil
salt

method
preheat oven to 200°C.

Make the marinade
blend anchovies, lemon juice, mustard, garlic, olive oil & pepper until thick and glossy

Add the marinade to the chicken

Add potatoes, carrots & shallots to a baking dish and season well with salt, pepper ,olive oil and the white wine

Place the chicken on top

Roast for 55 minutes until the chicken is golden and the vegetables are soft
(spoon the juices over halfway if you can)

Make the salsa verde
blend everything together until loose but still textured, taste and adjust it should be sharp, salty, herby

Plate the chicken with the veg and spoon over the salsa verde
