MASA MEZCAL
A drink that puts corn front and centre with Nixta, roasted corn oleo, underscored by the balance of citrus and smoke from the mezcal and a hit of lime.

MISTERIOS PALOMA
A frozen, floral take on the classic garnished with hibiscus salt.

TEPACHEVE
House-fermented pineapple tepache lengthened with Pacifico and a touch of demerara. A funky tropical, thirst quencher of a drink.

Available between 5 and 7pm, each day this week.

Designed for the hours between work and dinner, daylight and darkness, here’s what’s on the menu this week.

TOMAT-ITA
A bright, savoury margarita with Arquitecto tequila, tomato water and strawberry shrub. Fresh, vegetal and dangerously easy to drink.

PALOMA OSCURA
Tangy tamarind meets grapefruit and guajillo chilli in a darker, spicier take on the classic paloma.

FLOR DE JAMAICA
Hibiscus, ginger and cinnamon. Bright, tart and made for warm evenings.

Sips ‘til Siete is available to both pre-bookings and walk-ins.

The Máximo Sexy.

Named in homage to José Christian Alvarado Ruiz - Lucha Libre legend, originator of the exótico persona. Flamboyant, subversive and defiantly himself.

The drink follows suit. Lost Explorer Mezcal, Lillet Blanc, Manzanilla sherry - smoky, dry, saline, nutty. Stirred, with orange oils and a Gordal olive stuffed with spiced crispy corn.

A lot to live up to with this name. This drink manages it.
