Grilled courgette salad, pine nuts & sumac. This salad is a Morito summer classic but this time with the addition of a deep-fried courgette flower! We often use the sweet pale courgettes found throughout the Eastern Medierranean which we salt, lightly grill then dress with a fresh lemon, olive oil and generous sprinkling of sumac, pine nuts and mint. The crunchy warm fried courgette flower is a perfect and welcome contrast to the tart salad and the colours are fab.
