The old two-cask pour, once a standard for Guinness across these varied isles, done away with when they innovated the nitro keg, lives once again via Woodshedding’s very own HI-LO.
A high pressure cask provides vim and vigour (lots of gas!), while a low pressure cask provides smooth creaminess (not quite so much gas!).
A hard and heavy high pressure pour into a pint glass provides plentiful foam and releases the nitrogen sitting naturally in the beer, after a cascading settle a gentle top up with a low pressure pour tops (bottoms?) the creamy head up with some smooth and easy drinking liquid. A 90’s Stella advert style swipe with a bar knife takes off the extravagant and heavily bubbled dome leaving a lovely smooth dog collar of off-white head topping a deep black, creamy stout.
Something of a one off, difficult to
pull off, and exclusively delicious this time to The Wenlock Arms.
