Food from Northeastern Thailand, known as Isaan cuisine, is one of the country’s most distinctive culinary traditions.
Influenced by the culture and food of neighboring Laos, Isaan cuisine is characterized by its bold, vibrant flavors that combine spiciness, sourness, saltiness, and freshness.
Common ingredients include fresh chilies, lime juice, garlic, shallots, herbs such as mint and coriander, and fermented fish sauce, which adds a rich, savory depth to many recipes.
Some of the region’s most famous dishes include som tam, a spicy and tangy green papaya salad; larb, a herb-filled minced meat salad.
Isaan cuisine is celebrated for its rustic character, use of local ingredients, and ability to create complex flavors from simple foods, making it a beloved part of Thailand’s culinary heritage.
