Overnight soy-braised iberico pork collar & aged beef trim ragu, chimicurri & fermented daikon, on a corn tortilla. has been waiting to put tacos on the menu for a long time, we had plenty of trim left over from our iberico pork collar and whole aged rump from , we braised it overnight in our master stock. Very good results!

Family has always been the biggest inspiration for me. Coming from a family in Australia,that’s always been hospitable, always having BBQs, hosting Easter, Christmas and friends and family get togethers, it’s always been part of my growing up, and always keep it close to my heart, motivating me to stay in the restaurant scene and always being part of the reason I never give up holding space for our guests in the restaurant. We’ve never had much so I strive to have more than what we grew up, with hopes that makes my family proud, (though I know financial wealth means nothing to them). This is my mum, Ermione. Strong as an ox. Matriarch of a big Greek and Romanian family. I love her to bits and can’t thank her enough for being nothing but an angel of mother to me and my siblings.

Brandy serving up some Brixham bay mussels with nduja, rich chicken broth, oyster sauce. Trying to take photos of me while I’m covered in flour making ravioli. Thanks to for the local goods, always supporting us. Love to the team down there and so glad we’ve stayed friends for such a long time! on tonight, and we’ll probably pickle what’s left over for the moules-frites :)
