Beetroot Raj Kachori Chaat

Raj, meaning royal, is a nod to our elevated take on this classic street food snack. A crispy semolina shell filled with potato, chickpeas and dahi bhalla, topped with beetroot yoghurt and finished with tamarind, coriander and mint chutneys. Garnished with dal mot, sev, hing-tempered mung bean sprouts, fresh coriander and pomegranate seeds.

Kali Mirch Beef Kebab, Methi Chutney

Beef tenderloin, marinated in black pepper masala, skewered with onion and bell pepper and grilled over charcoal on the sigri. Finished with cashew cream, red chaat masala and coriander. Served with fresh fenugreek chutney.

Nargisi Prawn Koftas, Masala Ketchup.

A Mughlai take on the classic Scotch egg. Prawn mince seasoned with cashew nuts, coriander seeds, kasoori methi, garam masala, carom and fennel seeds, wrapped around a soft-boiled quail’s egg. Coated in breadcrumbs and fried until golden, served with masala ketchup.

Sweet Lassi

Originating in the Punjab, lassi has long been enjoyed as a respite from the summer heat. Our version combines Greek yoghurt, sugar, cardamom, rose water and kewra water, served chilled.

Mooli Methi Bream, Mooli Kachumber.

Whole sea bream marinated with fenugreek leaves, coriander stems, mint, green chilli and mooli, butterflied and grilled over the sigri. Served on a sun-dried lotus leaf with white radish kachumber and Kasundi mustard.
