As our culinary journey through the world of Francisco de Zurbarán continues, this dish turns to the vibrant city that shaped much of the artist’s life and work.

Seville: Hub of the Global Trade

Lemon chicken, mashed potato, grilled courgettes, chicken jus.

In the 17th century, Seville stood at the centre of a vast trading network, connecting Spain to the wider world through its bustling ports and maritime wealth. The city’s cultural and culinary landscape was enriched by the movement of ingredients, ideas, and craftsmanship from across continents.

This dish draws inspiration from the sun-drenched flavours of the Mediterranean that defined Zurbarán’s Seville. The brightness of lemon, the rustic character of grilled courgettes, and the comforting richness of chicken jus celebrate the beauty of simple ingredients, thoughtfully composed.

To celebrate the National Gallery exhibition of Francisco de Zurbarán, we have created a series of dishes inspired by the artist’s distinctive visual language.

The shadow of the Baroque - Barley orzotto, ragú al nero di seppia, parsley sauce.

Dubbed the ‘Spanish Caravaggio’ for his striking mastery of chiaroscuro, Zurbarán created works of extraordinary depth through dramatic contrast of light and shadow.

The deep black of the cuttlefish ink reflects the rich darkness that defines many of his paintings, while the vibrant parsley sauce brings a flash of light and colour, echoing the illumination that emerges from shadow in his work.

A tribute to one of the greatest masters of the Spanish Baroque, interpreted through the language of Italian cuisine.
