The Bubble Waffle (aka “Gai Daan Jai”)) was born in Hong Kong in the 1950s, when resourceful vendors turned leftover eggs into something totally new — a waffle that was crispy on the outside, soft and chewy on the inside, with those iconic golden bubbles.
