OLD BROWN JAVA ⚓
Old Brown Java is an aged, monsooned coffee grown on the old colonial estates on the east end of Java Island in Indonesia. These green coffee beans are exposed to the regions moist, warm air throughout the rainy season.
This process results in a strengthening of the coffees taste, a syrupy body and a lower acidity.
There is also a distinct colour change from the original green tint of the beans to a light brown colour, hence the name.🤎
The unique aging process was "accidentally" discovered by 16th century Dutch traders who carried coffee from Java to Europe. The beans would be stored away in the hold, becoming influenced by the wood of the ship and the ocean air, giving it an exceptionally unique flavour. 🌊
These days, this process is often replicated in wooden barrels stored under ground, usually left for a couple of years to mature.
