If the filthiest dirty martini you’ve ever had got together with an amaretto sour, this would be the result. Gift from Virgo is gin washed in extra virgin olive oil, with dry vermouth, orgeat and lemon, finished with a silky egg white top and a few drops of rosemary oil. It’s savoury, fresh and quietly decadent, and the garnish doubles as a snack.
