Wow what an incredibly busy few weeks it’s been! From fun 70th celebrations over 2 weekends, to a week of retreat cooking, to a gorgeous Asian inspired 30th birthday lunch al fresco, to a modern European stag BBQ buffet at a fancy Air BnB, and finally a pre-concert lunch at Fairlight Hall on the terrace, some serious cooking has been done. Another great Thai restaurant style cookery class at .classroomonthecoast last weekend. We made delicious crispy corn fritters and a knockout Thai green curry under the expert guidance of chef Wandee who generously shared her tips and tricks for achieving an authentic Thai taste at home, to rival any of our local restaurants. Thankfully had some beautiful weather for chargrilling a LOT of vegetables for my antipasti platter. Italian inspired buffet:
✨Chargrilled veg antipasti
✨Green beans with buttered breadcrumbs and pine nuts
✨Roasted portobello mushrooms with garlic, rosemary and goats cheese
✨Parmesan and panko crusted chicken breast
✨Steak tagliata with Parmesan and truffle oil
✨Sliced roasted potatoes with oregano and tomato
✨ Fresh tagliatelle with Lemon and basil butter

Stunning location for today’s 100th birthday party - an Abbey over 800 years old with herds of deer roaming around the grounds. Sadly forgot to snap the canapés except these at the start: pecorino shortbread with mozzarella, pesto and slow roast tomato; mini Yorkshire pudding with horseradish cream and rare roast beef. Also served were Thai fish cakes with sweet chilli sauce, mini samosas with spicy green chutney and mini goats cheese and red onion tartlets. Birthday boy was very happy!
