There’s a moment just before service when the whole dining room seems to hold its breath...
Every table is set. Every glass is polished until it catches the window light. The red rug, the brick wine rack, the white linen—all perfectly in their places. And then, silence.
It only lasts a few minutes. It's the calm before the first guests push open the door and the room fills with warm conversation, the clink of cutlery, and the amazing smell of something Gascon coming from the kitchen.
