A little recipe share as it was sooooo good….
🥩 Tomahawk Steak with Café de Paris Butter 🥩
The showstopper. The centerpiece.
The Steak
There’s only one way to treat a tomahawk: rare, and with respect.
*24 hours before:*
1. Rub generously with oil, flaky sea salt, and cracked black pepper.
2. Place uncovered on a rack in the fridge.
The salt draws moisture to the surface, which then dries out. That dry outer layer is the secret to locking in juices and building an incredible crust when it hits the heat.
3. Spend the next 24 hours anticipating dinner. It’s part of the recipe.
*The Sauce: Café de Paris Butter*
This is not a sauce. This is a statement.
Whisk together in a bowl:
- *1 tbsp* Dijon mustard
- *60ml* Henderson’s Relish
- *1 small tin* anchovies, finely chopped
Fold in, all finely chopped:
- *1* shallot
- *3* garlic chives
- *1 thumb* fresh ginger, grated
- *1* red chilli
- *1 tbsp* capers
Now for the magic. Head to the garden and harvest a handful of everything: chives, mint, rosemary, sage, marjoram, tarragon, parsley, basil, oregano. The more variety, the better. Finely chop and add to the bowl.
Season with white pepper and sea salt.
Melt *250g* good butter, then slowly whisk it into the mixture until emulsified.
Result: The most decadent, herb-packed butter to melt over your steak.
*The Cook*
Forget the oven. This calls for *fire*.
Grill over live flame for that signature smokiness. Keep it simple.
*Approx 15 minutes per side*, turning occasionally to build an even, crisp, charred crust without burning.
Target: beautiful rare center, smoky, caramelized exterior.
Once cooked, do the reveal for your guests… then let it *rest for 10 minutes*. This is non-negotiable. It’s where all the flavor settles.
*To Serve*
Slice and serve with the Café de Paris butter melting over the top.
Pairs perfectly with:
- A crisp green salad
- Burrata with Isle of Wight tomatoes
- Buttered chive Jersey Royals
