Spill it in Spires episode 5: Gavin Edney 👨‍🍳

Last week I managed to grab the one and only from and made him spill it in Spires. Gavin is a regular visitor to the college and always brings such an immense level of professionalism, experience and wisdom to our professional cookery students. A brilliant chef and mentor, here he shares his earliest food memory, the importance of loyalty and eventually tells us his stance on pineapple on pizza.

Final day of employer engagement week saw the wonderfully talented and absolute gentleman from bring a taste of France to Spires.

Edd made the most beautiful bouillabaisse with rouille crouton with our professional cookery students. The kitchen was alight with energy, curiosity and great produce. A true classic reminding us why dishes like this stand the test of time and are so important to learn.

Spill it in Spires Episode 4: Darryl Collins 👨‍🍳

Today we had the absolute pleasure of being joined by the excellent As part of our employer engagement week, they spent time with our level 1 students and needless to say the students were all blown away. A true master of their craft, passionate about their work and so kind to give up their time.

I managed to grab owner Darryl and got him to spill it in Spires. We spoke about the art of simplicity and the importance of flavour, many guilty food pleasures, his love for chocolate and advice he’d give to a chef starting out…. Well worth a watch
