Our third FUME FESTIVAL partner, (), absolutely saved the day! 🙌 After getting completely cleaned out on the first two days, they sent us the most incredible Australian Wagyu topside last minute.
The marbling on this was beautiful—a real treat for those Cheeseburger Madeleines. 🍔✨
Because of these legends, we were able to deliver premium beef in a £3.50 bite. Here’s how we did it:
🧂 Dry-brined overnight in salt and 16-mesh black pepper
🔥 Smoked low and slow
🍺 Spritzed with a beer-vinegar mix
