On Monday, 15 June, Pharaoh opens the door to the hills of Valsamoggia. We are hosting Orsi Vigneto San Vito, a biodynamic farm and winery just outside Bologna, where vineyards, vegetables, cereals, and Mora Romagnola pigs coexist as part of the same living ecosystem. No irrigation, no selected yeasts, no filtration - just spontaneous fermentations and wines shaped entirely by place, season, and instinct.

For Federico Orsi, wine is simply one expression of agriculture. The farm operates as a complete cycle, where soil, food, and wine are inseparable, each influencing the other.

Joining us in Athens is Federico Orsi .vito - winemaker, farmer, and the driving force behind the estate. Alongside his work in the vineyard, Federico is also a partner at the excellent bistro Ahimè (Michelin Bib Gourmand) and its sister restaurant, Uno Di Questi Giorni, in Bologna, extending the same philosophy of seasonality, farming, and close collaboration with producers into hospitality.

Orsi’s wines are imported to Greece by Kala Krasia .krasia.tinos - the company of fellow winemaker Jerome Binda of Kalathas in Tinos, whose own work is rooted in the preservation of indigenous varieties and a deep respect for place and agricultural heritage.

Τρίτη 12 Μαΐου — Pharaoh Wine dinner με Chavost

Για ένα βράδυ στο Pharaoh, στήνουμε ένα wine dinner αφιερωμένο στο Chavost, όπου κάθε κρασί συνδυάζεται με ειδικά σχεδιασμένο set menu. Πρόκειται για ένα από τα πιο ιδιαίτερα, χαμηλής παρέμβασης σπίτια της Καμπανίας, με ελάχιστες φιάλες να έχουν φτάσει στην Ελλάδα.

Το Chavost ιδρύεται το 1946 στο Chavot-Courcourt, νότια του Épernay, ως κολεκτίβα αμπελουργών που μοιράζονταν πόρους και διέθεταν την παραγωγή τους σε μεγάλα σπίτια της Καμπανίας. Για πάνω από 70 χρόνια δεν υπήρχε καν δική τους ετικέτα.

Το 2019, ο Fabian Daviaux - εγγονός ενός από τους ιδρυτές - αναλαμβάνει ως cellar master και επαναπροσδιορίζει την κατεύθυνση: μετατρέπει τους αμπελώνες σε βιολογικούς και σταματά την πώληση σταφυλιών. Για πρώτη φορά, το Chavost εμφιαλώνει σαμπάνια με τη δική του ταυτότητα. Η προσέγγιση είναι άμεση και χωρίς παρεμβάσεις: zero sulphur, zero dosage, zero make-up. Αυτόχθονες ζύμες, χωρίς διαύγαση ή προσθήκες - μόνο καθαρή πρώτη ύλη και πλήρης έλεγχος της ζύμωσης.

Τα κρασιά δεν βασίζονται σε μακρά παλαίωση· εκφράζονται φρέσκα, ζωντανά, με έντονο φρούτο, ορυκτότητα και καθαρή ενέργεια terroir. Μικρές παραγωγές, single-vintage λογική, χωρίς δηλώσεις και χωρίς συμβιβασμούς. Η σειρά “sans sulfites ajoutés” αποτελεί μία από τις πιο χαρακτηριστικές εκφράσεις της σύγχρονης φυσικής σαμπάνιας - με υψηλή ζήτηση και εξαιρετικά περιορισμένη διαθεσιμότητα.
